My Easy Cheesy Shrimp and Grits

You can't really speak of Southern Comfort meals without talking about Cheesy Shrimp and Grits. It's origins are deeply rooted in southern cuisine. Typically, it is a breakfast dish, but, I definitely say it can be a great Lunch/Brunch or Dinner meal. For Brunch, as you'll notice in the picture, it can be paired with Chicken and Waffles and for dinner it is often paired with Fried Catfish.

And in keeping in true fashion as always to my shortcuts to most meals, this one is no exception, as this recipe is being prepared with Quick Grits and Shrimp that has already been Peeled and Deveined.

So, let's get started on this easy recipe. So, all you need to prepare these Easy Peasy Cheesy Shrimp and Grits are:

3 cups chicken broth
1 cup uncooked quick-cooking grits
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
2 tablespoons butter
2 cups (8 ounces) shredded Cheddar cheese
2 pounds medium shrimp, peeled and deveined
1 tablespoon fresh lemon juice
2 tablespoons chopped fresh parsley
6 green onions, chopped

2 garlic cloves, minced


For enhanced flavor instead of using water bring chicken broth to a boil over medium-high heat; stir in grits. Cook, stirring occasionally, 5 to 7 minutes or until thickened. Remove from heat; stir in salt and next 3 ingredients. Set aside, and keep warm.

Cook shrimp in a sauté pan over medium-high heat 3 minutes or until almost pink, stirring occasionally. Add lemon juice and next 4 ingredients, and cook 3 minutes.

Spoon grits onto ramekins or individual plates or into shallow bowls; top with shrimp mixture. Serve immediately.
